Peanut Butter Banana Chia Pudding
Ch-ch-ch- chia!
Chia seeds are actually an ANCIENT superfood that is indigenous to Central America. Traditionally, Incan tribes viewed the chia seed as an incredible energy-providing staple for many centuries. Well, it turns out that the Incans were really onto something! These tiny little seeds are truly nutrition powerhouses. They provide healthy fat, loads of beneficial protein, antioxidants, and lots of great fiber. When compared to other foods, it seems that nothing else packs as much nutritional punch as the tiny chia seed. By adding just a small 2 tablespoon serving of chia seeds to a meal, you can satiate your hunger, increase energy, and help speed up your metabolism - with barely any caloric intake. SO MUCH GOODNESS!
Amazingly, we can add chia seeds to almost anything we eat! Alone they are pretty much flavorless, so my favorite way to incorporate them into my diet is by adding them to a smoothie, or sprinkling them on top of a smoothie bowl.
Or, you can try another one of our favorites - PB Banana Chai Pudding (you'll notice a LOT of our recipes include peanut butter, because it just so happens to be Lauren's favorite food...)
Here's what you need:
- 2 bananas
- 1-1/2c Greek yogurt
- 1/2c natural PB
- 3 TBSP chia seeds
Puree banana, yogurt and PB until smooth. Stir in chia seeds. Divid into small containers and chill overnight!
Top with fresh berries and a dolllop of peanut butter.
